While this recipe does take a little bit of effort, it is festive and fun, and more importantly, it tastes spooktacularly good! We adapted two different recipes found here and here to create this  magical coffee.

A small green bottle of Jameson Irish Whiskey, a white tube of black gel writing icing, a 10 oz bag of M&Ms, a bag of wooden skewers, and a 12 oz bag of Caribou coffee in a blue bag on a kitchen counter, with some kitchen utensils in the background.
The Ingredients & Supplies

Recipe (Enough for 2 cups of coffee)

For the ghouls:

Ingredients:

6 regular sized marshmallows (not mini sized, and not the jumbos)

4 oz Baker’s brand White Chocolate

2 Wooden Skewers, about 4 inches in length each

4 M&Ms (for the eyes. Our kids thought red was the spookiest color, but Kayla liked green the best)

Black writing icing (we used Betty Crocker brand)

Directions:

Start your white chocolate melting. You can either microwave it for about 30 seconds, or do what Kayla did which was throw them in her Little Dipper Crockpot. While the chocolate is melting, put 3 marshmallows on each skewer. Prepare a cookie sheet with a layer of wax paper on top. After your chocolate is nice and thoroughly melted, take a marshmallowed skewer and hold it over the chocolate. Spoon the chocolate over the marshmallows, turning and coating thoroughly. Kayla used the back of her spoon to smooth out the chocolate as she went. After you finish coating the ghoul, place on the wax papered cookie sheet. Immediately place 2  M&Ms  for the ghoul’s eyes on the top marshmallow. Next, take your black writing icing and make a small O for the mouth. Repeat the process for each ghoul. After you’ve finished making the ghouls, place them in the refrigerator to harden (which will probably take about 45 minutes – hour.) Kayla’s not very patient so she threw them into the freezer until the chocolate hardened up. Once it’s hardened, it’s time to make the cream, and then the coffee.

For the whipped cream:

Ingredients:

1 Cup of Heavy Cream

Note: 1 Cup of cream whips up to be more than you will need for 2 cups of coffee. It’s really enough for 6 cups of coffee or more. But really, can you ever have too much whipped cream? No. You can’t.

Directions:

Just before you brew your coffee, take the heavy cream and put it into your mixing bowl. We used our amazing KitchenAid mixer, which we love. Be sure to use the whisk attachment for this task. Next, turn the mixer on low, until a few bubbles form. Slowly increase the speed so that it doesn’t splatter all over your kitchen. Keep increasing the speed until you get that baby all the way up to the max. Let it run until you’ve got a very soft whipped cream. How do you know you’re there? You want very soft peaks, but not actual whipped cream. You want the cream to sit on top of the coffee, but easily mix in when you stir. You can stop the mixer as much as you want and see if you’re there (watch the video above if you need a visual). Relax. The whipped cream police won’t show up at your door if you whip it too much or not enough. Set aside.

For Each Mug of Coffee:

1 Cup of light roast coffee (we used Caribou Daybreak Light Roast)

1 Tablespoon of Light Brown Sugar

3 Tablespoons of Jameson Irish Whiskey

Put it all together:

Note: If you’ve got a glass Irish coffee mug, now is the perfect time to use it! This is such a pretty drink; using glass really classes it up. We didn’t have any so we just used some glass tumblers, which luckily didn’t shatter into a million little pieces when we poured our coffee in.

In the bottom of your coffee mug, put in the 3 Tablespoons of whiskey and 1 Tablespoon of brown sugar and mix. Next, pour in your freshly brewed coffee and stir it up. Then, spoon in some of that luscious whipped cream. We used a good 3 heaping tablespoons per glass. Finally, place a ghoul in your mug. Your ghoul can then be used to mix the cream into the coffee. Enjoy! Happy Halloween!
